BISCOTTI DIGESTIVE Traditional British biscuits, digestives can also be served buttered or with cheese. For a sweeter biscuit, brush one side with melted semisweet chocolate after baking. Ingredients: 3/4 cup whole wheat flour 1/4 cup all-purpose flour 1/2 teaspoon baking powder 1 tablespoon rolled oats 4 tablespoons butter or margarine 4 tablespoons brown sugar 4 tablespoons milk Directions: 1 Preheat oven to 375 degrees F. Grease cookie sheets. 2 In a large mixing bowl, sift together the flour and baking powder. Mix in the oatmeal. 3 Cream together the butter and the sugar and add to mixture. Stir in the milk until mixture forms a thick paste. 4 Knead dough on a floured surface until smooth. Roll out dough to approximately 1/8" thickness. Cut into rounds with cookie cutter about 2 1/2 inches in diameter. 5 Transfer to cookie sheets and prick with a fork. Bake 15 to 18 minutes, or until golden. Let cool on wire rack. Store in an airtight tin. Makes 1 dozen Per quanto riguarda i "rolled oats", anche la mia impressione e' che si tratti di fiocchi d'avena! Al riguardo ho interpellato un'inglese(anche se non cuoco esperto)che dopo una breve riflessione mi ha confermato che potrebbe trattarsi di fiocchi d'avena "schiacciati" (rolled da rolling pin=mattarello)in sostanza non grani d'avena ma fiocchi preparati per colazioni con i cereali!
