OLD TYPICAL LIGURIAN MEAT-LESS RECIPES
Liguria is famous for its gastronomy, armonizing products from wood, vegetable gardens and sea.
Thanks to the closeness between mountains and sea (Genova derives its Italian name from Latin "janua", door, but its dialectal name, Zęna, comes from "xenos", Greek for "stranger", meaning it had always been a great port), producing an exceptional climate for Northern Italy, you can find here in Liguria a peculiar variety of vegetables and fruits, like chestnuts and tasty artichokes, the sweetest olive oil and mushrooms, maize and citrus fruits, fish and the beautiful violet asparagus from Albenga.
So we decided to show some typical recipes...without meat involved!
N.B.: since we want to show some localism, in spite of globalization, the recipes names are first listed in Genoese dialect (and/or in Italian), then in English.
