    Fava beans and Pecorino cheese salad


    The typical spring picnic snack for the Genoese, fava beans and Pecorino Sardo are usually eaten with St.Olcese salami, shelling the beans just before eating.
    Pecorino sardo is suggested for this preparation since Pecorino Romano is a little too "strong"; if you cannot find a very, very young Pecorino Sardo, choose another young ewe milk cheese.

  • Raw fava beans (choose the smallest and more tender)
  • Very young Pecorino Sardo cheese ("Marzolėno", meaning made in March)
  • Lamb's lettuce or fresh raw spinach (the tiny ones)
  • Salt and pepper to taste
  • Extra virgin olive oil

    Clean and wash well the greens and cut them in strips, season with salt, pepper and extra-virgin olive oil. Add little cubes of cheese and the unshelled raw fava beans (it's suggested to shell them just before eating).

  • Suggested wine: Bianco di Coronāta or Colli di Luni bianco (both white and served at 8-10°C/ 46-50 F°)
