    Sciô de sûcca frïti,
    Fiori di zucca o zucchino fritti,
    Fried pumpkin or zucchini/courgette flowers


    Pumpkin or zucchini/courgette flowers are very popular in Liguria.
    The best ones are the "male" flowers, with a longer stem, since they're bigger, but the others (the ones sprouting from the zucchini/courgettes end) will do in any case.

    To serve 4 you'll need:

  • 16 or 20 zucchini/courgette or pumpkin flowers
  • 200 g (7 oz) white flour
  • a little milk
  • salt
  • olive oil

    Prepare a rather liquid batter with the flour, some spoonfuls of milk and water.
    Clean the flowers discarding the central part (the pistil). Clean them well with a wet cloth but don't wash them.
    Dip the flowers into the batter, shake gently any surplus and drop them in the hot (but not smoking) oil until they're golden.
    Drain them well on absorbent kitchen paper, sprinkle with fine salt and serve immediately.
