Ligurian Pecorino Cheese with honey
The Ligurian Pecorino is not easy to find: you may substitute it with a Pecorino Sardo.
A simple way to taste this cheese is to serve it with a few drops of acacia honey and with a "Pigato Riviera Ligure di Ponente" (white, 12° C/ 54° F) or a "Granaccia delle Colline Savonesi" (red, room temperature).
