    Sārvia frīta,

    Fried sage leaves


    Select the largest of a bunch of fresh and young sage leaves (the best time to pick them is in late spring when they have just newly sprouted), wash and dry them carefully. Fry in hot extra virgin olive oil, and leave to dry on kitchen paper. Season with salt and serve warm.
    The medicinal properties of the sage plant have long been known, and the leaves are renowned for their beneficial effect on tooth enamel.
