    Spinasci a-a Zeneize,
    Spinaci alla genovese,
    Genoa-style Spinach

    An easy recipe.

  • 1 kg. (2 lb) fresh spinach
  • 30 gr. (1 oz) butter
  • 1 clove of garlic
  • 30 gr. (1 oz) pine nuts
  • 30 gr. (1 oz) raisins
  • salt and pepper

    Soak the raisins in lukewarm water. Wash spinach and wilt it using only the water that clings to the leaves and a little salt. Squeeze it perfectly and then thinly mince.
    Brown the garlic with butter in a frying pan. Discard the garlic, mix the spinach, the soaked raisins and the pine nuts together and toss for 4/5 minutes.
    Serve with freshly ground pepper.
