    Sweet "Giuncata" with strawberry/raspberry (or blackberry) sauce


    Züncâ ("giuncata" in Italian), a very young cheese made of ewe milk, had its name from the special "mat" on which the curds used for this cheese were placed, since the mat was made of a Ligurian reed, Juncus maritimum (giunco in Italian) and very similar to the old Egyptian papyrus boats.
    It was so common that a law from 1413 stated you could offer it as a present to the Doge without being charged for bribery.
    The delicate and sweet taste of the züncâ allows to be combined with a warm sauce made simply cooking strawberries and/or raspberries (or blackberries only) with sugar or honey and a few drops of lemon juice until they're soft, and then blend them.
